Is in the oven... It smells so good!
1 spaghetti squash, roasted (did that before work today), peeled, seeded and drained (it needn't be dry, just drained of excess liquid)
8 eggs
About a cup of mixed grated cheeses - ours was parmesan heavy
Parsley, oregano, garlic, salt and pepper
1/2 c to 1 c tomato sauce
Mix it all in a bowl, slide into a buttered lasagna pan and bake at 425 F for an hour or something (not sure yet how long it takes, but from about 15 minutes in it will start to smell amazing).
Easy grain-free vegetarian meal for work days... Done.
ive been looking for smthg to make breakfasts out of...i need to be able to just grab something and head out the house some mornings. this looks and sounds GREAT. Do you just mix or beat the mxiture with an electric whisk?
ReplyDeleteI just mixed it with a fork! If you wanted to break down the spaghetti strands you could use a food processor or something I guess, but if you dilike the texture it might be worth just using a different kind of squash!

It ould hold another cup of add-ins (more cheese, other precooked vegetables such as potatoes or peppers or mushrooms, or cooked and chopped sausages, etc.) without any adjustment; if you wanted to add more than a cup extra I'd add an extra egg for each marginal cup in excess of that original quantity over the recipe's details.
