rice...arsenic...vegan... gluten-free..

    Re the post - good to know! I'm not crazy about having to dry the rice, or rinse it after cooking, for that matter, especially if cooking with stock. I'd think that using a long soak, like for phytic acid, would probably decrease the arsenic content as well, maybe especially if changing the water a few times. Something to think about!

    Very sensible solutions! I was pleased to see the whole soaking & sprouting thing being included. I've never understood why paleo folks don't just use sprouted flour, or eat sprouted grains and whatnot. Especially because, as he says, it's not like the vegetables we eat are IN ANY WAY the same ones our paleo ancestors ate! I mean come on! Our tomatoes, carrots, lettuces etc. are probably 90% as much the product of agriculture as grains! To be consistent I feel like paleo folks would have to only use foraged wild vegetables... if one is convinced primarily by the period bias/conviction that we need to turn to that depth of history/whatever. If it's about the actual makeup of the food, I think modern vegetables can go hand in hand with sprouted grains of all kinds personally.

    1. The paleo diet seems good to me because it requires focus on what you are eating. And you can clearly thrive on its substance, but otherwise I am not convinced of the argument. I think its a bit lacking in understanding of our evolutionary abilities.
